I am going nuts today...

If you have ever consulted with me you know I love nuts and natural peanut butter as healthy snacks especially if you want to be thin. The "Peanut Butter Diet": Heart-Healthy Alternative To Olive Oil...
Cholesterol-lowering, low fat diets have abounded in recent years in the quest to reduce the risk of heart disease, the most familiar being the American Heart Association's "Step II" diet, which confines dietary fat to less than 25% of calories and replaces the lost fat with carbohydrates. But recent research into the effects of monounsaturated fats (MUFAs, found in olive and certain other oils) suggests that low fat may not necessarily be the best way to ensure a healthy heart.
The high-MUFA diet goes against the conventional wisdom of heart disease prevention in that it is even higher in fat than the average American diet. Instead of replacing lost dietary fats with carbohydrates, the high MUFA diet makes up the "fat equation" with increased amounts of several different monounsaturated fats.

Sunflower Seeds, Pistachios Among Top Nuts For Lowering Cholesterol...
Researchers have known for some time that nuts and seeds are rich sources of phytosterols, a class of plant chemicals that have been shown to reduce cholesterol levels and improve heart health. In what is believed to be the most comprehensive analysis to date of the phytosterol content of nuts and seeds, chemists at Virginia Polytechnic Institute and State University in Blacksburg, Va., analyzed some 27 nut and seed products and found that pistachios and sunflower kernels had the highest levels of phytosterols among the nuts and seeds that are most commonly consumed as snack foods in the United States. Their study appears in the Nov. 30 issue of the American Chemical Society's Journal of Agricultural and Food Chemistry.

Pistachios Lower Cholesterol, Provide Antioxidants...
A handful of pistachios may lower cholesterol and provide the antioxidants usually found in leafy green vegetables and brightly colored fruit, according to a team of researchers. "Pistachio amounts of 1.5 ounces and 3 ounces -- one to two handfuls -- reduced risk for cardiovascular disease by significantly reducing LDL cholesterol levels and the higher dose significantly reduced lipoprotein ratios," says Sarah K. Gebauer, graduate student in integrative biosciences, Penn State, to attendees at the Experimental Biology meeting April 30 in Washington, D.C.
